Tea Making Directions
[Ingredients]
*tea leaves 7-8g
*Hot water 200ml
[Cooling the water down]
First pour the hot water into the Yunomi(teacup),
then pour it from the cup into the Kyusu(tea-pot).
After that, pour the water into the Yuzamashi(water cooler) to cool it down a little.
[Making the tea]
Step1:Put the leaves in the kyusu.
Imagine making a little mountain.
Step2: Pour in the water from the Yuzamashi.
Do not pour the hot water directly onto the tea leaves.
Let it brew for one minute.
Step3: Pour 1/3 of the tea into the yunomi
then swirl the tea around in the Kyusu 3 times.
*Swiring the tea:
Move the pot in a wide inward spiral.
The centrifugal force opens the leaves so their full flavor can be released.
Step4: Pour half of the tea into the yunomi and swirl the tea again before pouring the rest.
Step5: Finally, give the kyusu a firm shake in the opposite direction, pour in the last drops and serve.
The amount of leaves, steeping time and temprature of the water
all depend on the type of tea being made.
Higher tempretures make the tea stronger.
Lower tempretures bring out the tea's umami(savoriness).
